A fresh, emotional, insightful and intriguing reflection on the illustrious career of long-serving goalkeeper Fitzhenry who retired in 2010 after almost two decades of unrivalled service in the Wexford goal. Phelim Byrne Recipe for Tender Beef ‘Massaman one pot’ This is a classic slow cooked Thai style curry using potatoes, a different dish that is great for using less expensive cuts of meat and classically some fatty meat, maybe that’s another reason for the potatoes? My recipe for this dish is more like a goulash or stew than a curry yet has lovely earthy flavours and is not too spicy or heavy. This is definitely flavour of the month at the moment, if you have a slow cooker this recipe is ideal, the flavours develop more as with many curries and casseroles over a day or two , in this recipe if its made up to two days in advance you will notice the difference immensely.
1 can of coconut milk 400ml 1 lb stewing beef 2 onions 1 carrot 3 potatoes, cubed 1 tbsp of thai gold massaman paste 350ml chicken stock 1 tbsp of fish sauce • Brown off the beef in a large saucepan • Add the onion and colour a little • Remember the water trick in this one where you add a splash to the pan instead of oil if the ingredients seem to dry at this stage , thus steaming instead of adding more oils or fats • Add the carrot and coconut milk and bring to the boil • Now add the paste and mix well • Add the stock, fish sauce and potatoes • Simmer or casserole for about 1 ½ hours minutes or until the meat is tender • Season to taste – personally I love lots of mushrooms and toasted cashews in their at the last minute also • Serve with rice and this is classically garnished with peanuts
Tops tips: Try using chicken thighs instead of beef if you wish, the flavour is a lot lighter After adding the onions to the brown meat the pan may seem dry, add a splash of water instead of oil for a healthier dish and superior cooking method If when cooking the meat or even mince for a simple bolognaise you have a lot of water in the pan from the meat this may be because of two reasons, either the pan is not hot enough to begin ( it should be smoking) or perhaps even the meat may be a little too cold! Only add the oil to the smoking hot pan 3-4 seconds before the meat, its unhealthy to burn the oil for no reason and the flavour will also taint your food.
